It's National Carrot Cake Day! And to celebrate, we've decided to break out our aprons and bake a cake!

Carrot cake is a classic dessert, and it's surprisingly easy to make. So if you're looking for a tasty way to celebrate National Carrot Cake Day (or any other day of the week 😉), why not try baking one yourself? It's definitely worth the effort!

Cake Ingredients

  • 2 cups of All-Purpose Flour
  • 2 tsp of Baking Soda
  • 1/2 tsp of Fine Sea Salt
  • 1 1/2 tsp of Ground Cinnamon
  • 1 1/4 cups of Vegetable Oil
  • 1 cup of Granulated Sugar
  • 1 cup of Lightly Packed Brown Sugar
  • 1 tsp of Vanilla Extract
  • 4 Large Eggs
  • 3 cups of Grated Peeled Carrots (5 to 6 Medium Carrots)
  • 1 cup of Coarsely Chopped Pecans
  • 1/2 cup of Raisins

Frosting Ingredients

  • 8 ounces of Cream Cheese (Room Temperature)
  • 1 1/4 cups of Powdered Sugar
  • 1/3 cup of Heavy Whipping Cream
  • 1/2 cup of Coarsely Chopped Pecans (Cake Topping)
