It's National Carrot Cake Day! And to celebrate, we've decided to break out our aprons and bake a cake!
Carrot cake is a classic dessert, and it's surprisingly easy to make. So if you're looking for a tasty way to celebrate National Carrot Cake Day (or any other day of the week 😉), why not try baking one yourself? It's definitely worth the effort!
Cake Ingredients
- 2 cups of All-Purpose Flour
- 2 tsp of Baking Soda
- 1/2 tsp of Fine Sea Salt
- 1 1/2 tsp of Ground Cinnamon
- 1 1/4 cups of Vegetable Oil
- 1 cup of Granulated Sugar
- 1 cup of Lightly Packed Brown Sugar
- 1 tsp of Vanilla Extract
- 4 Large Eggs
- 3 cups of Grated Peeled Carrots (5 to 6 Medium Carrots)
- 1 cup of Coarsely Chopped Pecans
- 1/2 cup of Raisins
Frosting Ingredients
- 8 ounces of Cream Cheese (Room Temperature)
- 1 1/4 cups of Powdered Sugar
- 1/3 cup of Heavy Whipping Cream
- 1/2 cup of Coarsely Chopped Pecans (Cake Topping)
