Vanilla Crusted Scallops

Chef Ramon Lourido from Harbor Mist in Cold Spring Harbor, NY, had the chance to work with our Organic Ground Vanilla. His Vanilla Crusted Scallops were so good that he decided to add it to their menu! You'll find his recipe below and a video tutorial at the bottom of the page.

Scallop Ingredients:

  • 8 large Scallops
  • Salt and Pepper
  • LAFAZA Ground Vanilla
  • Onion Slices
  • 1/2 cup of Vinegar
  • 1/2 cup of White Wine

Scallop Instructions:

Season scallops w/ salt, pepper & Lafaza ground vanilla, in a sauté pan heat oil over medium heat add scallops & cook until golden brown, about 3 minutes each side. Take scallops out of pan, add onions & cook 2 to 3 minutes. Glaze pan w/ vinegar, add wine.

Risotto Ingredients:

  • 2 cups of Rice
  • 4 cups of Chicken Stock
  • 1/3 cup of Oil
  • 1/2 cup of Chopped Onions
  • 2 cups of White Wine
  • Salt and Pepper to taste
  • 2 tbsp of Butter
  • 1/2 tbsp of Parmesan Cheese

Risotto Instructions:

Bring broth to boil reduce heat & simmer. Heat 2 tbsp of oil in a saucepan, add onions & sauté for 2 minutes, add rice and half of the broth to the rice & cook, stirring constantly about 6 to 8 minutes. Add the remaining broth & simmer until broth is absorbed. Add wine & simmer stirring until risotto is cooked & creamy add salt, pepper & cheese.
