Treat yourself to these delicious, yet easy to prepare, Vanilla-Roasted Delicata Squash Rings!
Ingredients:
- 4 delicata squash
- 1/4 cup cold butter (use less for crispier squash)
- 2 teaspoons LAFAZA pure ground vanilla powder
- Coarse salt to taste
- Freshly ground black pepper to taste
Directions
Preheat the oven to 375°F. Cut the squash in half widthwise and use a long spoon to reach in and scrape out the seeds. Cut off and discard the ends. Using a sharp knife, carefully slice the squash into very thin (approx.1/4 inch) rings.
Lay out the squash rings on greased baking sheets. The rings can overlap slightly, but don’t pile them on top of each other. Cut the cold butter into small pieces and distribute them evenly amongst the squash.
Sprinkle the vanilla evenly across the squash and season liberally with salt and pepper. Bake for about 20 minutes, then use tongs to flip the squash. Bake until browned and crisp, about another 15 minutes. Check often as the thinner slices can burn quickly.
